Carrot & Zucchini Muffin Recipe (GF, DF)

Healthy Carrot Zucchini & Oatmeal Muffins (GF, DF,)

A healthy treat, these muffins are gluten-free, dairy-free and refined sugar free.

Ingredients:

1 cup grated zucchini
1 cup grated carrot
2 cups gluten-free oats
1/2 cup sugar alternative of choice e.g Monk fruit or Stevia.
1/2 cup rice bran oil or vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk alternative of choice e.g almond milk, rice milk
2 teaspoons gluten-free baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Directions:

1. Preheat oven to 175°C and line a muffin tin with paper liners.

2. In a large bowl, mix together the grated zucchini, grated carrot, and oats.

3. Add sugar alternative, oil, eggs, and vanilla extract to the mixture and stir until well combined.

4. Stir in alternative milk of choice, then add baking powder, baking soda, salt, cinnamon, and nutmeg. Mix until just combined.

5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.

6. Bake for 20-25 minutes, or until a toothpick inserted into the centre comes out clean.

7. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
