Vegan Ginger Cookies (GF, DF)

Gluten-Free & Dairy-Free Ginger Cookies

Looking for a vegan cookie that tastes amazing? These gluten-free & dairy-free ginger cookies are sweetened with molasses and apple sauce, so you can enjoy a sweet treat without the refined white sugar. 

Ingredients 

2 tsp ground ginger

1 tsp cinnamon

¼ tsp ground cloves

200 grams gluten-free oat flour

1 tsp baking soda

⅓ cup molasses

⅓ cup unsweetened apple sauce

1-2 Tbsp of plant-based milk (only if needed)

Method

  1. Preheat the oven to 180 degrees C and line a baking tray with baking paper.

  2. Add all your dry ingredients to a large bowl and mix well.
  3. Mix in the apple sauce and molasses until incorporated into a dough - you may need to add in a dash of milk if the mix is still too dry/crumbly.
  4. Roll the dough into 10 balls and place on your baking sheet. Press each one down gently.
  5. Bake for 10 minutes, then remove from the oven and let cool for at least 5 mins before serving.
