Vegan Ginger Cookies (GF, DF)
Gluten-Free & Dairy-Free Ginger Cookies
Looking for a vegan cookie that tastes amazing? These gluten-free & dairy-free ginger cookies are sweetened with molasses and apple sauce, so you can enjoy a sweet treat without the refined white sugar.
Ingredients
2 tsp ground ginger
1 tsp cinnamon
¼ tsp ground cloves
200 grams gluten-free oat flour
1 tsp baking soda
⅓ cup molasses
⅓ cup unsweetened apple sauce
1-2 Tbsp of plant-based milk (only if needed)
Method
- Preheat the oven to 180 degrees C and line a baking tray with baking paper.
- Add all your dry ingredients to a large bowl and mix well.
- Mix in the apple sauce and molasses until incorporated into a dough - you may need to add in a dash of milk if the mix is still too dry/crumbly.
- Roll the dough into 10 balls and place on your baking sheet. Press each one down gently.
- Bake for 10 minutes, then remove from the oven and let cool for at least 5 mins before serving.
