Cucumber Tomato Salad

A refreshing cucumber tomato salad, perfect for summer gatherings. Serves 6.

Ingredients:

2 large cucumbers, peeled and sliced
4 ripe tomatoes, chopped
1/2 red onion, thinly sliced
1/4 cup olive oil
2 tablespoons white vinegar
1 teaspoon sugar
Salt and pepper to taste
Fresh basil leaves, for garnish

Directions:

1. In a large bowl, combine the sliced cucumbers, chopped tomatoes, and thinly sliced red onion.

2. In a small bowl, whisk together olive oil, white vinegar, sugar, salt, and pepper until well combined.

3. Pour the dressing over the cucumber, tomato, and onion mixture. Toss gently to coat all the vegetables with the dressing.

4. Cover and refrigerate for at least 1 hour, allowing the flavours to meld together.

5. Before serving, toss the salad again and adjust the seasoning if necessary. Garnish with fresh basil leaves.
