Healthy Oatmeal Yogurt Cake (GF, DF)

A healthy breakfast made of oatmeal, yogurt, berries, and nuts! Simply mix everything together and bake!

Ingredients:

1 cup or 130g gluten-free rolled oats.
1 cup of hot water
2 eggs
120g natural yoghurt.
3 tablespoons erythritol sweetener
3 tbsp melted butter* (use coconut or olive oil for dairy free version)
1 cup chopped walnuts.
pinch of salt.
1 tbsp baking powder.
3 Tbsp coconut or almond flour
1 tsp vanilla essence.
1 cup of berries. (e.g blueberries, boysenberries)

Directions:

1. Preheat oven at 180°C. Mix together oats and hot water, set aside for 10 minutes for oatmeal to swell.

2. In a large bowl, add the oatmeal, eggs and natural yogurt, mix well. Add in the rest of the ingredients except the berries.

3. Mix everything together, adding the berries last to stir them very gently and the end. This avoids crushing the berries. 

4. Grease a casserole dish with butter or vegetable oil and bake in a preheated oven at 180°C for 40-45 minutes.
