Dorito Taco Salad

A tasty low-carb dinner that is quick to make. Enjoy the satisfying crunch of refreshing lettuce mixed with saucy beef. Yum!

Ingredients:

450g lean beef mince
1 package taco seasoning
1 head iceberg lettuce, chopped
1 cup cherry tomatoes, halved
1 cup shredded cheddar cheese
1 cup black beans, rinsed and drained
1 cup corn kernels
1 cup sliced black olives
1 red onion, diced
1 avocado, diced
1 cup sour cream
1 cup salsa
2 cups crushed Doritos

Directions:

1. In a large skillet, brown the ground beef over medium heat. Drain the excess fat.

2. Add the taco seasoning to the beef according to the package instructions. Set aside to cool.

3. In a large salad bowl, combine the chopped lettuce, cherry tomatoes, cheddar cheese, black beans, corn, black olives, and red onion.

4. Add the cooled taco-seasoned beef to the salad bowl.

5. Right before serving, add the diced avocado and crushed Doritos to the salad. Toss everything together.
Serve with dollops of sour cream and salsa on top.
