Healthy & Quick Greek Salad

Ingredients:

A good Greek salad never gets old. This one is made with romaine lettuce, chickpeas, tomatoes, cucumbers, feta cheese, red onion, kalamata olives, banana peppers, and fresh chopped parsley, all tossed in a homemade Greek vinaigrette. Feel free to use as much of each salad ingredient as you prefer or have on hand! You can also add chicken or salmon for additional protein. 

To make the Greek vinaigrette, add the following ingredients to a small mason jar, tightly close the lid, and shake well:

½ cup extra virgin olive oil.
2 Tbsp red wine vinegar.
¼ cup fresh lemon juice.
1 tsp Dijon mustard.
1 Tbsp dried oregano.
1 tsp salt.
½ tsp black pepper.

Add as much or as little dressing to the salad for your preferred taste and save the rest for later. Yum!
