Low Carb Keto Seed Crackers

These keto crackers made with flaxseed, sesame seed, pumpkin, and sunflower seeds are delightfully crispy and perfect for snacks or entertaining while maintaining a low-carb lifestyle. 

Ingredients 

  • 2 cups warm water
  • 1 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1 cup sesame seeds
  • 1/3 cup flaxseeds
  • 1/2 teaspoon salt
  • 1 teaspoon dried rosemary or other herbs
  • 2 tablespoons psyllium husk (ground or flakes)

Method

  1. Mix all dry ingredients and herbs together in a large mixing bowl. Add water and stir well.

  2. Set aside and allow the mixture to thicken for about 20 minutes. The water will thicken the psyllium husk and flaxseeds to create a gel-like in consistency.
  3. Place the mixture over on a baking tray covered with baking paper and spread into a thin layer about 4cm thick. 
  4. Cut or mould into your desired cracker shape, or leave as a thin sheet to break into peices after baking. 
  5. Bake in the oven for 1 hour at 150ºC. You can increase the baking time if you prefer your crackers to be more crispy, or reduce if you prefer a softer texture. 
  6.  Remove from the oven and break or cut up your crackers into pieces if you haven't already, then allow to cool completely before eating.
  7. Store in an airtight container for up to 2 weeks at room temperature.
