Healthy Sweet & Sour Chicken
A dinner-time favourite, this recipe is refined sugar-free, gluten free, and dairy-free. Cook this up for meal prep to have during the week, or enjoy as a healthy dinner. We like to eat this with steamed broccoli.
Ingredients
- 2 lbs boneless skinless chicken breast or tenders, cut into bite-sized pieces
- 4 Tbsps gluten-free flour, or arrowroot powder
- Sea salt and freshly ground black pepper, to your taste.
- 2 Tbsps avocado oil
- 4 capsicum, diced
- 1 large white onion, diced
- 1/4 cup chopped fresh green onions
Sauce Ingredients
- 1 cup 100% pure pineapple juice
- 1 cup organic tomato sauce
- 3 Tbsps coconut aminos (GF), or low sodium soy sauce.
- 2 Tbsps raw honey or pure maple syrup
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp cayenne pepper
- a pinch of sea salt, or to taste
Method
- In a medium mixing bowl, whisk all sauce ingredients to make your sweet and sour sauce. Set aside.
- Place the chicken pieces into a large bowl. Toss with sea salt, pepper, and flour until coated.
- Heat the avocado oil in a large pan on medium-high heat.
- Add in your coated chicken and cook for about 6 minutes, gently stirring until nicely browned.
- Add your sweet and sour sauce to the chicken, then bring to a simmer.
- Once simmering, reduce heat to a low simmer and stir in the diced onion and capsicum.
- Simmer on low for about 10 minutes, or until chicken is cooked through and veggies are tender. Keep stirring to avoid the sauce burning once it thickens.
- Serve with a sprinkle of green onions on top and enjoy.
