This healthy Italian Sub Salad will fill your Italian craving with a quick and easy alternative.
Ingredients:
For the salad:6 cups romaine lettuce, chopped220g of sliced turkey chopped (or your favorite lean protein)220g salami, chopped¾ cup sliced provolone, chopped (or your favorite type of sliced cheese)2 large tomatoes, chopped½ red onion, thinly sliced¼ cup pepperoncini, slicedFor the Italian vinaigrette:3 Tbsp extra virgin olive oil2 Tbsp red wine vinegar1½ tsp Italian seasoning1 garlic clove, mincedSalt & pepper, to taste
Instructions:
1. To make your dressing, whisk vinaigrette ingredients together in a bowl. Then place it in the fridge while you prepare the rest of your salad.2. Prepare all your salad ingredients and place in a large bowl.3. Pour your desired amount of vinaigrette over the top and toss it all together until it's evenly coated.4. Serve immediately.
