The Best Quinoa Salad
This quinoa salad is packed with nourishment and whole-grain fibre. Serves 4-6.
Ingredients:
150 grams quinoa
6 green spring onions, chopped
1 small red capsicum, finely diced
2 carrots, grated
25 grams chopped mint
25 grams parsley, chopped
6 tablespoons olive oil
Juice of 1 lemon
1 tablespoon honey
30 grams chopped dried raisins
Salt and pepper to taste
1/2 teaspoon turmeric powder
Instructions:
1. Rinse the quinoa under cold water and drain.
2. In a saucepan, add 300mL of water and bring it to a boil. Add the rinsed quinoa and a pinch of salt. Reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked. Let it cool.
3. In a large bowl, combine the cooked quinoa, chopped green spring onions, diced red capsicum, grated carrots, chopped mint, and parsley.
4. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, pepper, and turmeric powder.
5. Pour the dressing over the quinoa mixture and toss well to combine.
6. Add the chopped dried raisins and mix again. Taste and adjust the seasoning if needed.
7. Serve the quinoa salad chilled or at room temperature.
